1 can (13.5 oz) coconut milk
1 cup pineapple chunks, drained
1/2 cup heavy cream (or full-fat coconut cream for a lighter option)
1/4 cup sugar (adjust according to taste)
1/4 teaspoon vanilla extract
1/4 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/4 teaspoon salt
1 tablespoon cornstarch mixed with 1 tablespoon water
Instructions
In a medium saucepan, combine cooked rice, coconut milk, pineapple chunks, heavy cream, sugar, vanilla extract, cinnamon, nutmeg, and salt. Stir until mixed well.
