  • 1 diced red bell pepper
  • 1 cup uncooked parboiled long-grain brown rice
  • 3 tablespoons fajita seasoning
  • 1 cup frozen corn kernels
  • 1 can (14 ounces) low sodium black beans, drained and rinsed
  • 5 cups shredded chicken
  • 3 cups reduced sodium chicken broth
  • 1 can (4 ounces) mild green chilies
  • 1 tablespoon olive oil
  • 2 tablespoons tomato paste
  • 1 1/4 cups shredded Monterey Jack cheese

Instructions

  1. Preheat your oven to 400°F (200°C). In a large mixing bowl, combine onion, red bell pepper, brown rice, fajita seasoning, and cayenne pepper (if using).
  2. In another bowl, whisk together chicken broth, green chilies (with juices), tomato paste, and olive oil.
  3. Pour the liquid mixture over the rice mixture and stir until well combined. Add in the shredded chicken and black beans; mix gently to combine.
  4. Transfer everything to a greased 9×13 inch baking dish and spread evenly. Cover tightly with aluminum foil.
  5. Bake for 65-70 minutes until most liquid is absorbed and rice is tender. Remove foil, sprinkle cheese on top, and bake for an additional 5-10 minutes until cheese is melted and bubbly.
  6. Let the casserole rest for 5-10 minutes before serving. Garnish with fresh cilantro or green onions if desired.
