  • 8 oz cream cheese (room temperature)
  • 4 cups powdered sugar

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and line two 8-inch round cake pans with parchment paper.
  2. In a bowl, whisk together flour, baking powder, and salt; set aside.
  3. In another bowl, cream room temperature butter and sugar until light and fluffy. Gradually mix in coconut milk and coconut extract until smooth.
  4. Add the dry ingredients gradually to the wet mixture, mixing until just combined.
  5. Whip egg whites in a separate bowl until stiff peaks form; gently fold into the batter.
  6. Divide the batter evenly between the prepared pans and bake for about 25 minutes or until a toothpick comes out clean.
  7. While cooling, prepare the pineapple filling by combining crushed pineapple, sugar, and cornstarch in a saucepan over medium heat until thickened.
