  • 2 tbsp instant espresso powder
  • ½ tsp salt
  • 2 tsp baking powder
  • ½ tsp baking soda
  • ½ cup unsalted butter (cold, cut into small pieces)
  • ¾ cup mini semi-sweet chocolate chips
  • 1 cup heavy whipping cream (cold)
  • 1 tsp pure vanilla extract
  • 1 large egg (room temperature)

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, whisk together flour, brown sugar, espresso powder, salt, baking powder, and baking soda until well combined.
  3. Cut in the cold butter using a pastry cutter or two forks until the mixture resembles coarse crumbs.
  4. Gently fold in the chocolate chips.
  5. In a separate bowl, whisk together heavy cream and vanilla extract. Pour half into the dry mixture and gently combine until just moistened; then add the rest.
  6. Turn dough onto a lightly floured surface; shape into an 8-inch circle about 1 inch thick. Cut into triangles.
  7. Place triangles on the prepared baking sheet; chill in the refrigerator for 30 minutes.
  8. Brush with an egg wash made from one egg beaten with heavy cream before baking for about 20-25 minutes until golden brown.
