  • ¼ cup honey
  • 2 tablespoons chopped cilantro
  • 2 tablespoons minced garlic
  • 1 tablespoon chili powder
  • 1 tablespoon cumin
  • 1 tablespoon onion powder
  • 1 teaspoon kosher salt
  • ½ teaspoon cayenne pepper
  • 2 tablespoons vegetable oil

Instructions

  1. In a large bowl, mix lime juice, honey, cilantro, garlic, chili powder, cumin, onion powder, salt, and cayenne pepper.
  2. Add chicken thighs to the marinade, coating them well. Cover and refrigerate for at least 20 minutes or up to 4 hours.
  3. Preheat the oven to 400°F (200°C). Heat vegetable oil in an oven-safe skillet over medium-high heat.
  4. Sear marinated chicken thighs for about 2-3 minutes per side until golden brown.
  5. Transfer the skillet to the preheated oven and bake for 8-10 minutes or until the internal temperature reaches 165°F (74°C).
  6. Allow resting for 5-10 minutes before serving.
