  • 1 1/2 cups chickpeas (drained and rinsed)
  • 1 cup natural peanut butter
  • 1/3 cup coconut sugar
  • 2 tablespoons monk fruit and erythritol sweetener (or more coconut sugar)
  • 2 tablespoons water
  • 1/4 cup cacao powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon sea salt
  • 1/4 cup unsweetened shredded coconut

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a food processor, combine chickpeas, peanut butter, coconut sugar, monk fruit sweetener (or coconut sugar), water, cacao powder, baking soda, vanilla extract, sea salt, and shredded coconut. Blend until smooth.
  3. Scoop out approximately two tablespoons of dough per cookie and roll into balls. Place on the prepared baking sheet about two inches apart.
  4. Gently flatten each ball with a fork to create an X pattern on top.
  5. Bake for 12-15 minutes until edges are set but centers remain soft.
  6. Allow cookies to cool on the baking sheet for at least 10 minutes before transferring to a wire rack.
