  • 2 cups grated zucchini (about 2 small)
  • ¾ cup vegetable oil
  • 3 large eggs
  • 2 teaspoons vanilla extract
  • 1 ½ cups chopped walnuts (or pecans)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease two 8×4-inch loaf pans.
  2. In a medium bowl, whisk together flour, sugar, baking powder, baking soda, cinnamon, and salt.
  3. In a large bowl, mix grated zucchini, oil, eggs, and vanilla until well combined.
  4. Gently fold the dry mixture into the wet ingredients until just combined. Add walnuts and fold gently.
  5. Divide the batter evenly between the prepared pans and level the tops.
  6. Bake for 50-60 minutes or until a toothpick inserted in the center comes out clean.
