  • 2 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/3 cup almond butter or cashew butter
  • 3 tbsp honey or maple syrup (if vegan)
  • 1/2 tsp vanilla extract
  • 1 egg or flax egg (if vegan)
  • 1/3 cup chocolate chips (dairy-free if needed)
  • 3/4 cup shredded zucchini

Instructions

  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine oat flour, oats, ground flaxseed, chopped walnuts, cinnamon, nutmeg, baking soda, and salt.
  3. In another bowl, whisk together almond butter or cashew butter, honey or maple syrup, vanilla extract, and your chosen egg until smooth.
  4. Pour the wet mixture into the dry ingredients and fold gently until just combined.
  5. Add shredded zucchini and chocolate chips; mix lightly until evenly distributed.
  6. Scoop tablespoon-sized portions onto the prepared baking sheet, leaving space between each cookie.
  7. Flatten the tops slightly for even cooking.
  8. Bake for 10-12 minutes until golden around the edges.
  9. Allow cookies to cool on the pan for about 15 minutes before transferring to a wire rack.
