  • ¼ cup fresh lemon juice
  • 1 cup powdered sugar (for the glaze)
  • 2 tablespoons fresh lemon juice (for the glaze)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
  2. In a bowl, whisk together flour, baking powder, baking soda, and salt.
  3. In another bowl, cream softened butter and sugar until light and fluffy. Add eggs one at a time, mixing well after each addition.
  4. Stir in lemon zest and vanilla extract.
  5. Alternately add dry ingredients and buttermilk mixture to the creamed mixture, starting and ending with flour.
  6. Pour batter into the prepared loaf pan and smooth the top.
