- 1 large sweet potato (about 12 ounces), diced
- 1 lb flat iron steak, diced
- 3 tbsp olive oil (divided)
- 2 cloves garlic, minced
- 2 bell peppers, diced
- 4 green onions, sliced
- 2 tbsp coconut aminos
- 1 tsp sea salt
- 2 tsp cracked black pepper
- Microwave diced sweet potatoes with sea salt in a covered bowl for 4-6 minutes until just tender.
- Heat 2 tablespoons of olive oil in a skillet over high heat. Sear steak pieces until browned on all sides. Remove from skillet.
- In the same skillet, add remaining olive oil and sweet potatoes; cook until golden brown.
- Make a well in the center of the skillet; sauté minced garlic for about a minute.
- Add bell peppers and green onions; cook until tender-crisp.
- Return steak to the skillet along with coconut aminos. Toss to combine and heat through.
- Season with cracked black pepper before serving.
