Ingredients

  • 1 large sweet potato (about 12 ounces), diced
  • 1 lb flat iron steak, diced
  • 3 tbsp olive oil (divided)
  • 2 cloves garlic, minced
  • 2 bell peppers, diced
  • 4 green onions, sliced
  • 2 tbsp coconut aminos
  • 1 tsp sea salt
  • 2 tsp cracked black pepper

Instructions

  1. Microwave diced sweet potatoes with sea salt in a covered bowl for 4-6 minutes until just tender.
  2. Heat 2 tablespoons of olive oil in a skillet over high heat. Sear steak pieces until browned on all sides. Remove from skillet.
  3. In the same skillet, add remaining olive oil and sweet potatoes; cook until golden brown.
  4. Make a well in the center of the skillet; sauté minced garlic for about a minute.
  5. Add bell peppers and green onions; cook until tender-crisp.
  6. Return steak to the skillet along with coconut aminos. Toss to combine and heat through.
  7. Season with cracked black pepper before serving.
