  • 1 1/4 cups shredded cheddar cheese
  • 2/3 cup ricotta cheese (whole milk)
  • 1/2 cup milk
  • 1 teaspoon salt
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon paprika
  • 2 cups water

Instructions

  1. Boil 2 cups of water in a large pot over medium-high heat. Add the macaroni and 1 teaspoon salt. Cook until al dente (about 7 minutes), then drain.
  2. In the same pot over low-medium heat, combine the drained pasta, cheddar cheese, ricotta cheese, and milk. Stir continuously until melted and smooth.
  3. Add salt, Dijon mustard, garlic powder, onion powder, and paprika to the cheese mixture; stir well to combine.
  4. Pour the mac and cheese into a greased baking dish. Optionally top with extra cheddar cheese for a golden crust.
