  • 3/4 cup granulated sugar
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • Zest of 1 lemon
  • 1/2 cup vegetable oil
  • 1/4 cup unsalted butter, melted
  • 2 large eggs (room temperature)
  • 1/2 cup milk (room temperature)
  • 1 tsp vanilla extract
  • 1 1/2 cups fresh or frozen blueberries

Instructions

  1. 1. Preheat your oven to 375°F (190°C) and prepare a muffin tin with liners or grease it well.
  2. 2. In a mixing bowl, whisk together the flour, baking powder, baking soda, salt, and lemon zest.
  3. 3. In another bowl, combine the melted butter and vegetable oil until blended. Add the eggs one at a time followed by milk and vanilla extract; mix well.
  4. 4. Gently fold the wet ingredients into the dry mixture until just combined—don’t overmix!
  5. 5. Carefully add in the blueberries and fold them into the batter.
  6. 6. Fill each muffin cup two-thirds full with batter and bake for about 25 minutes or until golden brown.
