- 1 red onion, chopped
- 3 mild red chillies, roughly chopped
- 2 tsp ground coriander
- 2 tsp ground cumin
- ½ tsp ground cinnamon
- 3 garlic cloves, peeled
- 2 sticks lemongrass, inner part finely chopped
- 1 tsp minced fresh ginger
- 3 tsp fish sauce (ensure gluten-free if needed)
- 1 tsp brown sugar
- Small bunch of fresh coriander stalks (save the leaves for garnish)
- ½ tsp salt
- 2 tbsp vegetable oil
- 1½ tbsp cornflour (cornstarch)
- 1 kg braising beef (beef chuck), cut into chunks
- ¼ tsp salt
- ¼ tsp freshly ground black pepper
- 400 ml beef stock (use gluten-free stock cubes if necessary)
- 400 g canned coconut milk
- 500 g baby new potatoes, halved if large
- Juice of 1 lime
- Steamed rice
- Chopped fresh coriander (cilantro) for garnish
- Chopped red chillies for garnish
- Lime wedges for serving
- Begin by creating the Massaman paste using a food processor to blend red onion, garlic, lemongrass, chillies, and spices until smooth.
- Coat beef chunks with cornflour, salt, and pepper.
- Heat oil in a heavy pan and sear the beef until browned on all sides.
- Stir in the prepared Massaman paste and cook for 2–3 minutes.
- Add beef stock and coconut milk; bring to a simmer.
- Cover and cook on low heat for 1 hour 45 minutes.
- Stir in halved baby potatoes and simmer for another 25–30 minutes until tender.
- Finish with lime juice before serving over rice.
