  • Massaman paste
  • 1 red onion, chopped
  • 3 mild red chillies, roughly chopped
  • 2 tsp ground coriander
  • 2 tsp ground cumin
  • ½ tsp ground cinnamon
  • 3 garlic cloves, peeled
  • 2 sticks lemongrass, inner part finely chopped
  • 1 tsp minced fresh ginger
  • 3 tsp fish sauce (ensure gluten-free if needed)
  • 1 tsp brown sugar
  • Small bunch of fresh coriander stalks (save the leaves for garnish)
  • ½ tsp salt
  • 2 tbsp vegetable oil
  • 1½ tbsp cornflour (cornstarch)
  • 1 kg braising beef (beef chuck), cut into chunks
  • ¼ tsp salt
  • ¼ tsp freshly ground black pepper
  • 400 ml beef stock (use gluten-free stock cubes if necessary)
  • 400 g canned coconut milk
  • 500 g baby new potatoes, halved if large
  • Juice of 1 lime
  • Steamed rice
  • Chopped fresh coriander (cilantro) for garnish
  • Chopped red chillies for garnish
  • Lime wedges for serving

Instructions

  1. Begin by creating the Massaman paste using a food processor to blend red onion, garlic, lemongrass, chillies, and spices until smooth.
  2. Coat beef chunks with cornflour, salt, and pepper.
  3. Heat oil in a heavy pan and sear the beef until browned on all sides.
  4. Stir in the prepared Massaman paste and cook for 2–3 minutes.
  5. Add beef stock and coconut milk; bring to a simmer.
  6. Cover and cook on low heat for 1 hour 45 minutes.
  7. Stir in halved baby potatoes and simmer for another 25–30 minutes until tender.
  8. Finish with lime juice before serving over rice.
