  • 33½ lb beef rib roast
  • 1 cup kosher salt
  • ½ cup brown sugar
  • 1 onion (sliced)
  • 2 apples (sliced)
  • ¾ cup dried apricots
  • 1½ cups chicken broth
  • ½ cup apricot jam
  • 2 tbsp butter
  • 2 star anise
  • 34 bay leaves

Instructions

  1. Brine the Rib Roast: In a large pot, combine water, kosher salt, brown sugar, peppercorns, bay leaves, cloves, star anise, and cinnamon stick. Bring to a boil until dissolved; let cool.
  2. Soak the Roast: Submerge the rib roast in the cooled brine and refrigerate for at least 12 hours.
  3. Sauté Aromatics: Heat olive oil in a skillet over medium heat; sauté sliced onions until golden. Add sliced apples and dried apricots; cook until softened.
  4. Sear the Roast: Remove the roast from brine, rinse, and pat dry. Season with kosher salt and spices. Sear in olive oil until browned on all sides.
  5. Assemble & Roast: Place sautéed aromatics in a roasting pan; set the seared roast on top. Pour in chicken broth around it. Cover tightly and roast at 325°F for about 90 minutes or until internal temperature reaches 135°F.
  6. Prepare Apricot Glaze: In a saucepan, melt butter; stir in apricot jam and apple cider vinegar until well combined.
  7. Rest & Serve: Let the roast rest before slicing; drizzle with apricot glaze when serving.
