  • 1 tablespoon lime juice

  • 3 cups cooked jasmine rice (preferably day-old)
  • 2 tablespoons vegetable oil (for grilling and frying)
  • 2 cloves garlic, minced
  • 1 cup mixed vegetables (peas, carrots, bell pepper)
  • 3 green onions, sliced
  • ¼ cup fresh basil leaves, chopped
  • Salt and pepper, to taste

Instructions

  1. In a bowl, combine lemongrass, Thai chili paste, soy sauce, lime juice, and sugar to create the marinade. Add shrimp and marinate for at least 20 minutes.
  2. Heat vegetable oil in a skillet over medium heat. Sauté minced garlic until fragrant. Add mixed vegetables and stir-fry for about 3-4 minutes.
  3. Increase heat to high; add day-old jasmine rice and lime juice. Stir well and cook for another 3-5 minutes until heated through.
  4. Fold in chopped basil and green onions; season with salt and pepper to taste.
