  • 2 cooked & shredded chicken breasts
  • 2 sliced zucchinis
  • 1 cup corn kernels
  • 1/2 cup black beans
  • 1 cup shredded cheddar cheese
  • 1/2 cup salsa
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1 tbsp olive oil
  • Salt & pepper to taste

Instructions

  1. Preheat your oven to 200°C (400°F).
  2. In a large skillet, heat olive oil over medium heat and sauté the sliced zucchinis until tender but still slightly crisp.
  3. In a mixing bowl, combine shredded chicken, corn, black beans (rinsed), sautéed zucchini, salsa, chili powder, cumin, salt, and pepper. Mix well.
  4. In a baking dish (9×13 inches), spread half of the chicken mixture evenly at the bottom. Layer sautéed zucchini on top and sprinkle cheese generously over everything.
  5. Bake in the preheated oven for about 20 minutes or until bubbly and golden brown.
  6. Allow to rest for 5-10 minutes before serving.
