  • 2 cups low-sodium vegetable or chicken broth
  • 1 tbsp all-purpose flour
  • 1 cup half-and-half
  • 3 oz soft gorgonzola cheese, cubed
  • 16 oz cooked gnocchi
  • 6 sage leaves, finely sliced

Instructions

  1. In a large pot or Dutch oven, heat vegetable oil and butter over medium heat. Add diced onion and sauté until softened (about 5 minutes).
  2. Stir in minced garlic, kosher salt, and ground nutmeg; cook for another minute until fragrant.
  3. Mix in pumpkin puree thoroughly and cook for about 2 minutes.
  4. Gradually pour in broth while stirring. Bring to a gentle simmer for about 10 minutes.
  5. In a separate saucepan, make a roux with the remaining butter and flour; whisk until smooth then gradually add half-and-half to thicken.
  6. Pour the roux into the soup mixture and stir well to combine.
  7. Add gorgonzola cheese and cooked gnocchi; allow to simmer for an additional 5 minutes.
  8. Finish by stirring in finely sliced sage leaves.
