  • ¼ cup rice vinegar
  • 1½ tablespoons granulated sugar
  • 1 teaspoon salt
  • 1 pound imitation crab meat
  • ½ cup Kewpie mayo (plus additional)
  • 1 tablespoon Sriracha
  • 2 tablespoons soy sauce (light sodium)
  • English cucumber (sliced)
  • Avocado (sliced)

Instructions

  1. Rinse sushi rice under cold water until clear, then soak for 30 minutes.
  2. Cook the rice according to package instructions; let it rest after cooking.
  3. Combine rice vinegar, sugar, and salt in a bowl until dissolved; mix with warm rice gently.
  4. In another bowl, mix imitation crab meat, Kewpie mayo, and Sriracha until well combined.
  5. Preheat oven to 375°F (190°C). Grease a baking dish and layer half of the seasoned rice at the bottom.
  6. Spread crab mixture over the rice, sprinkle with furikake if desired, and top with remaining rice.
  7. Bake for 15-20 minutes or until heated through and slightly golden on top.
