  • 5 ears fresh corn (shucked)
  • 2 medium Roma tomatoes (diced)
  • 1 medium English cucumber (diced)
  • 1 medium avocado (diced)
  • 1/2 medium red onion (minced)
  • 1/2 cup chopped fresh basil
  • 1/4 cup chopped fresh mint leaves
  • 1/4 cup extra virgin olive oil
  • 3 tablespoons apple cider vinegar
  • 1 tablespoon apple vinegar
  • Salt and black pepper to taste

Instructions

  1. Boil water in a large pot and cook the shucked corn for about 5 minutes until tender. Remove from heat and let cool before slicing off the kernels.
  2. In a large mixing bowl, combine the diced tomatoes, cucumber, avocado, minced red onion, corn kernels, chopped basil, and mint.
  3. In a separate small bowl, whisk together olive oil, apple cider vinegar, apple vinegar, salt, and pepper until well combined.
