Ingredients

Scale
  • 1 cup unsalted butter, softened
  • 1 cup brown sugar
  • ½ cup granulated sugar
  • 2 large eggs
  • 2 tsp vanilla extract
  • 2 ¾ cups all-purpose flour
  • 1 tsp baking soda
  • ½ tsp baking powder
  • ½ tsp salt
  • ½ cup Biscoff cookie butter (slightly chilled)
  • Optional: 1 cup white chocolate chips

Instructions

  1. Prepare the filling by scooping teaspoons of chilled Biscoff cookie butter onto a parchment-lined tray. Freeze for at least 30 minutes.
  2. In a mixing bowl, cream together softened butter, brown sugar, and granulated sugar until fluffy. Add eggs one at a time and mix in vanilla extract.
  3. In another bowl, whisk together flour, baking soda, baking powder, and salt. Gradually combine with wet mixture until just mixed. Fold in optional white chocolate chips.
  4. Assemble cookies by flattening tablespoons of dough and placing a frozen dollop of Biscoff filling in the center. Seal securely.
  5. Preheat oven to 350°F (175°C). Arrange cookies on a lined baking sheet and bake for 10-12 minutes or until edges are golden but centers are soft.
  6. Allow cookies to cool for five minutes before transferring them to a wire rack.
