  • 1 cup plus 2 tablespoons sugar
  • 2 ½ cups all-purpose flour
  • 2 ½ teaspoons baking powder

  • ¼ cup vegetable oil
  • ¾ cup plain Greek yogurt
  • ¼ cup milk
  • 1 ½ teaspoons vanilla extract
  • 1 ½ tablespoons sugar (for streusel topping)
  • 1 ½ tablespoons brown sugar (for streusel topping)
  • A pinch of salt (for streusel topping)
  • ¼ cup flour (for streusel topping)
  • 2 ½ tablespoons warm melted butter (for streusel topping)

Instructions

  1. Preheat your oven to 425°F (220°C) and prepare a muffin pan by greasing it or using paper liners.
  2. In a small bowl, mix together the ingredients for the streusel topping: flour, granulated sugar, brown sugar, and salt. Add melted butter until crumbly; set aside.
  3. In a separate bowl, whisk together eggs and sugar until thickened. Gradually add melted butter, oil, Greek yogurt, milk, and vanilla until combined.
  4. In another bowl, combine flour, baking powder, and salt.
  5. Gently fold the dry mixture into the wet mixture until just combined. Fold in sliced strawberries.
  6. Fill muffin cups almost to the top with batter and add strawberry filling on top. Sprinkle with streusel topping.
  7. Bake for about 17 minutes or until golden brown.
