  • 1 1/4 cups mini pretzels (crushed)
  • 4 tablespoons unsalted butter (room temperature)
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 ounces cream cheese (cold)
  • 1/4 cup confectioners' sugar
  • 1/4 cup heavy whipping cream (cold)
  • 1/4 cup strawberry preserves

Instructions

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a bowl, whisk together flour, baking powder, baking soda, and sea salt; set aside.
  3. In another bowl, cream together butter and sugar until light and fluffy. Add egg and vanilla; mix well.
  4. Gradually add dry ingredients to wet mixture until just combined. Fold in crushed pretzels gently.
  5. Chill dough for at least 30 minutes.
  6. Scoop mounds of dough onto prepared baking sheets, leaving space between each cookie.
  7. Bake for about 10 minutes or until edges are set but centers remain soft; let cool on racks.
  8. For the frosting, beat cream cheese and confectioners' sugar until smooth, then gradually add heavy whipping cream until fluffy peaks form.
  9. Top half of the cooled cookies with frosting and spoon on strawberry preserves; sandwich with remaining cookies.
