  • 8 ounces strawberries (hulled and quartered)
  • 1 avocado (chopped)
  • 2 ounces crumbled goat cheese

  • 3 tablespoons sparkling grape juice vinegar
  • Juice of ½ lemon
  • 2 tablespoons honey
  • 1 teaspoon Dijon mustard
  • 1 garlic clove (freshly grated)
  • Pinch of kosher salt and pepper
  • ½ cup olive oil

Instructions

  1. Toast the almonds: In a nonstick skillet over medium heat, combine sliced almonds and sugar. Stir constantly until golden brown (about 6–8 minutes). Transfer to parchment paper to cool.
  2. Assemble the salad: In a large mixing bowl, toss arugula with salt and pepper. Add strawberries, avocado, goat cheese, and chopped pistachios along with cooled almonds.
  3. Make the vinaigrette: Whisk together sparkling grape juice vinegar, lemon juice, honey, Dijon mustard, grated garlic, salt, and pepper in a bowl. Slowly stream in olive oil while whisking until emulsified.
