  • 1 ½ lb chicken breast (34 pieces)
  • 1 cup ricotta cheese
  • 1 cup fresh chopped spinach
  • ½ cup parmesan cheese, shredded
  • 1 ½ cups marinara sauce
  • 3 garlic cloves, minced
  • ½ tsp cracked pepper
  • ½ tsp sea salt
  • 1 tsp Italian seasoning
  • ¼ tsp crushed red pepper

Instructions

  1. Preheat oven to 425°F (220°C).
  2. In a mixing bowl, combine ricotta cheese, shredded parmesan, chopped spinach, one minced garlic clove, Italian seasoning, and crushed red pepper; mix well to form the filling.
  3. Pound the chicken breasts to an even thickness and season with salt and cracked pepper. Place them in a greased baking dish.
  4. Spread the ricotta filling over each chicken breast evenly.
  5. Pour marinara sauce over the chicken until well covered.
  6. Bake uncovered for 20-25 minutes or until the chicken reaches an internal temperature of 165°F (75°C). Add extra parmesan on top during the last five minutes of baking.
  7. Let rest for five minutes before serving.
