  • 12 hard-boiled eggs
  • 2 tbsp mayonnaise
  • 1.5 tbsp dill pickle relish
  • 2 tsp yellow mustard
  • 1.5 tsp Cajun seasoning
  • 23 dashes hot sauce
  • 1.5 cups flour
  • 2 large eggs (beaten)
  • 2 cups Panko breadcrumbs
  • 2.5 tsp gumbo file powder
  • Salt & pepper to taste

Instructions

  1. Boil the eggs: Place eggs in cold water, bring to a boil, cover, and let sit off heat for 12–15 minutes. Transfer to an ice bath.
  2. Prepare the filling: Peel eggs, halve them lengthwise, and remove yolks into a mixing bowl. Mash yolks with mayonnaise, dill pickle relish, mustard, Cajun seasoning, and hot sauce until smooth.
  3. Coat the eggs: Dredge egg whites in flour, dip in beaten egg, then coat with Panko mixed with gumbo file powder.
  4. Cook: Heat oil in a frying pan to 350°F (175°C). Fry coated egg halves until golden brown, about 3–4 minutes per side.
  5. Garnish: Sprinkle with additional Cajun seasoning and serve warm or at room temperature.
