  • 1 cup (packed) dark brown sugar (220g)
  • 1 cup (2 sticks or 226g) unsalted butter, at room temperature
  • 3 large eggs, at room temperature
  • 1 3/4 cups cake flour (220g)
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/2 teaspoon allspice
  • 1/2 teaspoon freshly grated nutmeg
  • 1/4 teaspoon ground cloves
  • 1/2 cup cultured buttermilk (120ml)
  • 2 cups diced peaches, skin on (about 3 smallish peaches)
  • 1 teaspoon coarse sparkling sugar (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a 9×5 inch loaf pan by greasing it with butter and lining it with parchment paper.
  2. In a stand mixer, cream together the dark brown sugar and unsalted butter until fluffy. Add eggs one at a time, mixing well after each addition.
  3. In a separate bowl, whisk together the cake flour, baking powder, salt, cinnamon, allspice, nutmeg, and cloves.
  4. Gradually add the dry ingredients to the creamed mixture, alternating with cultured buttermilk until combined gently.
  5. Fold in diced peaches carefully to avoid breaking them apart.
  6. Pour the batter into the prepared loaf pan and sprinkle coarse sparkling sugar on top.
  7. Bake for 50-55 minutes or until a toothpick inserted into the center comes out clean.
  8. Cool in the pan for about 10 minutes before transferring to a wire rack to cool completely.
