  • 1 teaspoon vanilla extract
  • 1/2 cup cinnamon sugar (for topping)

  2. In another bowl, mix milk, egg (or applesauce), melted butter, and vanilla extract until smooth.
  3. Pour wet ingredients into the dry mixture and gently fold until just combined; some lumps are okay.
  4. Preheat a non-stick skillet over medium heat and lightly grease it.
  5. Pour about 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on top (about 2-3 minutes), then flip and cook for another 1-2 minutes until golden brown.
  6. Immediately sprinkle with cinnamon sugar after removing from the skillet.
  7. Repeat with remaining batter, keeping pancakes warm in a low oven if necessary.
