- 4–5 lobster tails
- 1/4 tbsp kosher salt
- 1/4 tbsp black pepper
- 1/2 tsp smoked paprika
- 1/2 tsp garlic powder
- 1/2 tsp cumin
- 2 tbsp canola oil
- 1/8 cup butter
- 1 tbsp chopped parsley
- 1 tbsp grated Parmesan cheese
- 2 minced garlic cloves
- 1/2 tsp red pepper flakes
- Juice of 1 lemon
- Preheat smoker to 375°F.
- Prepare lobster tails by cutting along the top shell; gently pry the meat away from the shell.
- In a bowl, mix salt, pepper, paprika, garlic powder, cumin, and canola oil to form a paste. Rub this mixture generously on the lobster meat.
- Place seasoned lobster tails in the smoker on indirect heat and smoke for 20 to 30 minutes until they reach an internal temperature of 145°F.
- In the last ten minutes of cooking, melt butter in a basting skillet and mix in parsley, Parmesan, garlic, red pepper flakes, and lemon juice.
- Glaze lobster tails with the butter mixture before removing from the smoker.
- Let rest for two minutes before serving.
