  • 45 lobster tails
  • 1/4 tbsp kosher salt
  • 1/4 tbsp black pepper
  • 1/2 tsp smoked paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp cumin
  • 2 tbsp canola oil
  • 1/8 cup butter
  • 1 tbsp chopped parsley
  • 1 tbsp grated Parmesan cheese
  • 2 minced garlic cloves
  • 1/2 tsp red pepper flakes
  • Juice of 1 lemon

Instructions

  1. Preheat smoker to 375°F.
  2. Prepare lobster tails by cutting along the top shell; gently pry the meat away from the shell.
  3. In a bowl, mix salt, pepper, paprika, garlic powder, cumin, and canola oil to form a paste. Rub this mixture generously on the lobster meat.
  4. Place seasoned lobster tails in the smoker on indirect heat and smoke for 20 to 30 minutes until they reach an internal temperature of 145°F.
  5. In the last ten minutes of cooking, melt butter in a basting skillet and mix in parsley, Parmesan, garlic, red pepper flakes, and lemon juice.
  6. Glaze lobster tails with the butter mixture before removing from the smoker.
  7. Let rest for two minutes before serving.
