  • 1 onion
  • 3 cloves garlic
  • 2 sprigs rosemary
  • 1 tablespoon olive oil
  • 2 teaspoons dried oregano
  • 1 tablespoon lemon juice and zest
  • Salt & black pepper to taste
  • 150ml (⅔ cup) stock
  • 1 bay leaf

Instructions

  1. Prepare the onion by peeling and quartering it; layer the segments at the bottom of the slow cooker.
  2. Scrub and cut the potatoes into quarters or sixths; place them on top of the onions.
  3. Slice two cloves of garlic thinly and chop rosemary; score incisions into the lamb and fill them with garlic slices and rosemary.

  5. Sear the marinated lamb in a non-stick pan until golden brown on all sides.
  6. Place the seared lamb in the slow cooker atop the potatoes, then pour in stock and add a bay leaf.
  7. Cover and cook on low for 8 hours.
