- 2kg (4-4.5 lb) lamb shoulder or leg
- 600g (21 oz) waxy potatoes
- 1 onion
- 3 cloves garlic
- 2 sprigs rosemary
- 1 tablespoon olive oil
- 2 teaspoons dried oregano
- 1 tablespoon lemon juice and zest
- Salt & black pepper to taste
- 150ml (⅔ cup) stock
- 1 bay leaf
- Prepare the onion by peeling and quartering it; layer the segments at the bottom of the slow cooker.
- Scrub and cut the potatoes into quarters or sixths; place them on top of the onions.
- Slice two cloves of garlic thinly and chop rosemary; score incisions into the lamb and fill them with garlic slices and rosemary.
- In a bowl, mix olive oil, crushed garlic, oregano, lemon juice, zest, salt, and pepper; rub this marinade all over the lamb.
- Sear the marinated lamb in a non-stick pan until golden brown on all sides.
- Place the seared lamb in the slow cooker atop the potatoes, then pour in stock and add a bay leaf.
- Cover and cook on low for 8 hours.
