  • 3 ½ pounds beef chuck, cut into 1 ½ inch cubes
  • 2 tablespoons canola oil
  • 2 onions, finely diced
  • 1 tablespoon tomato paste
  • 4 garlic cloves, minced
  • ¼ cup all-purpose flour
  • 3 cups beef broth (low-sodium)
  • 1 ¼ cups non-alcoholic Guinness-flavored beef broth
  • 1 ½ tablespoons brown sugar
  • 1 tablespoon fresh thyme
  • 1 pound carrots, cut into 1 inch pieces
  • 1 ½ pounds Yukon gold potatoes, cut into 1 inch pieces
  • Fresh parsley for garnish
  • Salt & pepper to taste

Instructions

  1. Season the cubed beef with salt and pepper, then coat with flour. Heat canola oil in a Dutch oven over medium-high heat and sear the beef until browned on all sides. Remove and set aside.
  2. In the same pot, sauté onions until caramelized, about 20 minutes. Stir in tomato paste and garlic; cook for another minute.
  3. Deglaze with beef broth and non-alcoholic Guinness broth, scraping up flavorful bits from the bottom.
  4. Add brown sugar and thyme; mix well.
  5. Transfer the beef back into the pot along with carrots and potatoes. Ensure everything is covered by the liquid.
  6. Place in a slow cooker on low for 6–8 hours until the beef is fork-tender.
  7. Before serving, stir in chopped parsley and adjust seasoning as needed.
