  • 8 oz uncooked ziti or penne
  • 1 lb shrimp (peeled and deveined)
  • 3 cloves garlic (minced)
  • 3 tbs unsalted butter (divided)
  • 1 tsp olive oil
  • 2 tbs chopped fresh parsley
  • 1/4 tsp dill weed
  • 2 tbs flour
  • 1/2 cup chicken stock
  • 1 cup half-and-half or whole milk
  • 1 tbs lemon juice
  • 14.5 oz can diced fire-roasted tomatoes (drained)
  • 1/2 cup grated Romano or Parmesan cheese
  • 1 tsp salt
  • 1/4 tsp pepper
  • 1/2 cup shredded mozzarella

Instructions

  1. Preheat your oven to 350°F (180°C).
  2. Cook the ziti in salted boiling water until al dente, about two minutes less than package directions. Drain and set aside.
  3. In a large deep oven-proof skillet, heat olive oil over medium heat. Add one tablespoon of butter and sauté minced garlic until fragrant.
  4. Add shrimp along with parsley and dill weed; cook until shrimp are pink and opaque, around three minutes. Remove shrimp from skillet and set aside.
  5. In the same skillet, melt the remaining butter over medium heat; whisk in flour to create a roux for about three minutes.
  6. Gradually whisk in chicken stock followed by half-and-half until the sauce thickens.
  7. Stir in fire-roasted tomatoes, lemon juice, grated cheese, salt, and pepper.
  8. Fold in cooked ziti and shrimp until well combined; top with shredded mozzarella cheese.
  9. Bake in the preheated oven for about 10 minutes or until cheese is bubbly and golden brown.
