  • 2 pounds large shrimp, peeled and deveined
  • 1 fresh pineapple, chopped into 1” pieces
  • 3 bell peppers, cut into 1 1/4-inch pieces
  • 1 red onion, cut into 1-inch chunks
  • 5 tablespoons olive oil, divided
  • 1/3 cup apple cider vinegar
  • 1/4 cup canned pineapple juice
  • 1/4 cup sugar
  • 1/4 cup honey
  • 2 tablespoons ketchup
  • 1 tablespoon reduced sodium soy sauce
  • 1 teaspoon salt
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon ginger powder
  • 1/4 teaspoon red pepper flakes

Instructions

  1. Soak wooden skewers in water for at least 30 minutes if using.
  2. In one bowl, whisk together olive oil (3 tablespoons), apple cider vinegar, pineapple juice, sugar, honey, ketchup, soy sauce, salt, garlic powder, ginger powder, and red pepper flakes to create the marinade.
  3. Reserve about ¼ cup of the marinade for later use. Add shrimp to the remaining marinade and let it sit at room temperature for about 30 minutes.
  4. In another bowl, combine pineapple chunks and vegetable pieces with the reserved marinade and toss until well-coated.
  5. Assemble skewers by alternating shrimp with pineapple and vegetables.
  6. Preheat grill to medium-high heat or oven to 400°F (200°C). Grill kabobs for about 2-3 minutes on each side or bake for about 10-12 minutes until shrimp are opaque.
  7. Allow kabobs to rest before serving.
