  • 12 oz shrimp (peeled and deveined)
  • 2 avocados (ripe)
  • 1 mango (ripe)
  • 1 small red onion
  • 1 handful cilantro
  • 1 small jalapeño
  • 2 limes
  • 1 tsp chili powder
  • 2 tbsp extra virgin olive oil
  • 1 tsp honey
  • Salt and black pepper to taste

Instructions

  1. In a mixing bowl, combine shrimp with olive oil, chili powder, salt, and black pepper. Toss to coat.
  2. Grill or sauté shrimp over medium-high heat for about 2–3 minutes on each side until pink and charred.
  3. Dice mango, finely chop red onion and jalapeño, then mix with chopped cilantro in a separate bowl. Squeeze lime juice over the mixture and season with salt.
  4. For the Lime-Chili Sauce, whisk together lime juice, olive oil, honey, chili powder, salt, and pepper until smooth.
  5. Slice avocados and drizzle lime juice over them to prevent browning.
  6. Assemble bowls: start with a base (greens or rice), add grilled shrimp, avocado slices, and top with mango salsa. Drizzle with Lime-Chili Sauce.
