12 oz shrimp (peeled and deveined)
2 avocados (ripe)
1 mango (ripe)
1 small red onion
1 handful cilantro
1 small jalapeño
2 limes
1 tsp chili powder
2 tbsp extra virgin olive oil
1 tsp honey
Salt and black pepper to taste
Instructions
In a mixing bowl, combine shrimp with olive oil, chili powder, salt, and black pepper. Toss to coat.
Grill or sauté shrimp over medium-high heat for about 2–3 minutes on each side until pink and charred.
Dice mango, finely chop red onion and jalapeño, then mix with chopped cilantro in a separate bowl. Squeeze lime juice over the mixture and season with salt.
For the Lime-Chili Sauce, whisk together lime juice, olive oil, honey, chili powder, salt, and pepper until smooth.
Slice avocados and drizzle lime juice over them to prevent browning.
Assemble bowls: start with a base (greens or rice), add grilled shrimp, avocado slices, and top with mango salsa. Drizzle with Lime-Chili Sauce.
