  • 2 large eggs
  • 7 tbsp castor sugar
  • 1/2 tbsp honey
  • 1/2 tsp rose water (plus extra for glaze)
  • 13 tbsp cake flour
  • 1 tsp baking powder
  • 1/2 cup confectioners' sugar (for glaze)
  • 34 tsp water (for glaze)
  • Edible dried rose petals (optional for garnish)

Instructions

  1. Preheat oven to 375°F (190°C). Grease madeleine pan with butter and dust with flour.
  2. Cream softened butter and castor sugar until light and fluffy.
  3. Gradually add eggs, one at a time, mixing until well combined.
  4. Stir in honey and rose water until blended.
  5. Sift together cake flour and baking powder; gently fold into the wet mixture until just combined.
  6. Chill batter for at least 30 minutes.
  7. Fill each mold three-quarters full with batter and bake for 10-12 minutes or until golden brown.
  8. Allow cooling briefly before glazing with a mixture of confectioners' sugar, rose water, and water.
