Ingredients

Scale
  • 1 cup smooth peanut butter
  • 3 tablespoons softened butter
  • 1 & 1/2 cups powdered sugar
  • 1/4 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 2 cups chocolate chips
  • 2 teaspoons canola oil

Instructions

  1. In a stand mixer, combine peanut butter, softened butter, powdered sugar, vanilla extract, and salt. Mix on low speed until smooth and cohesive.
  2. Scoop out equal portions (about 24) onto a parchment-lined baking sheet and shape them into egg forms. Freeze for 30-60 minutes until solid.
  3. Melt chocolate chips with canola oil in a microwave-safe bowl, stirring at 30-second intervals until smooth.
  4. Dip each frozen egg into the melted chocolate, ensuring full coverage. Allow excess chocolate to drip off before placing back on the baking sheet.
  5. Freeze again for another 15-30 minutes until set. Optionally drizzle more melted chocolate over the top for decoration.
