  • 1.5 cups orzo
  • 2 cups diced tomatoes
  • 2 cups diced cucumbers
  • 1/2 cup finely diced red onion
  • 1/2 cup olives (Kalamata or green)
  • 1/2 cup crumbled feta cheese
  • 1.5 tbsp fresh dill
  • 4 tbsp olive oil
  • 3 tbsp lemon juice
  • 1 tsp dried oregano
  • 1/4 tsp garlic powder
  • 1/2 tsp salt
  • 1/2 tsp black pepper

Instructions

  1. Boil a large pot of salted water and cook the orzo for 8–10 minutes until al dente. Drain without rinsing.
  2. In a large bowl, combine diced tomatoes, cucumbers, red onion, olives, and feta.
  3. In a separate bowl, whisk together olive oil, lemon juice, dill, oregano, garlic powder, salt, and pepper.
  4. Add the drained orzo to the vegetable mixture and pour the dressing over it. Toss gently until everything is well coated.
  5. Allow to rest for about five minutes before serving chilled or at room temperature.
