  • 1 pound raw jumbo shrimp (deveined and cleaned)
  • 1 red bell pepper (cut into 1-inch pieces)
  • 1 cup pineapple chunks (fresh or canned)
  • 3 cloves garlic (minced)
  • 1 teaspoon minced ginger
  • Salt and pepper (to taste)
  • 2 teaspoons cornstarch + 1 tablespoon water
  • 3/4 cup pineapple juice
  • 1/4 cup low sodium soy sauce
  • 1/3 cup low sodium chicken broth
  • 1/3 cup hoisin sauce
  • 1/4 cup brown sugar (or honey/maple syrup)
  • Sesame seeds and sliced green onions for garnish

Instructions

  1. In a small bowl, whisk together pineapple juice, soy sauce, chicken broth, hoisin sauce, brown sugar, cornstarch mixed with water until smooth.
  2. Heat vegetable oil in a large skillet over medium-high heat. Add shrimp seasoned with salt and pepper. Sear until pink and cooked through (about 6-8 minutes), then transfer to a plate.
  3. In the same skillet, add bell pepper and pineapple chunks. Sauté for about 4-5 minutes until tender-crisp.
  4. Add minced ginger and garlic; cook for another 30 seconds until fragrant.
  5. Return shrimp to the skillet along with the prepared sauce. Stir gently until everything is coated and simmering for about 2-3 minutes.
  6. Serve over rice and garnish with sesame seeds and green onions.
