  • 1 teaspoon ground cinnamon
  • 1/3 cup vegetable oil or olive oil
  • 1/2 cup creamy peanut butter
  • 2/3 cup brown sugar
  • 1/3 cup honey
  • 2 large eggs (room temperature)
  • 1/3 cup milk (room temperature)
  • 1 teaspoon pure vanilla extract
  • 1 and 1/2 cups shredded zucchini (no need to blot)
  • 1 cup semi-sweet chocolate chips

Instructions

  1. Preheat your oven to 350°F (177°C) and grease a 9×5-inch loaf pan with nonstick spray.
  2. In a large bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon until well combined.
  3. In a separate medium bowl, mix the vegetable oil, peanut butter, brown sugar, honey, eggs, milk, and vanilla until smooth.
  4. Add the wet mixture to the dry ingredients and stir until just combined.
  5. Gently fold in the shredded zucchini and chocolate chips.
  6. Pour the batter into the prepared loaf pan and tap it gently on the counter to remove air pockets.
  7. Bake for 55–70 minutes or until a toothpick inserted into the center comes out clean. If needed, cover loosely with aluminum foil halfway through baking.
  8. Allow the bread to cool in the pan for about an hour before transferring it to a wire rack to cool completely.
