  • 1 teaspoon cinnamon (for topping)
  • 2 tablespoons melted butter (for topping)

Instructions

  1. Preheat your oven to 400°F (200°C) and prepare a muffin tin by greasing it or using paper liners.
  2. In a large bowl, mix together the flour, granulated sugar, baking powder, cinnamon, and salt until evenly combined.
  3. In another bowl, whisk together melted butter, milk, egg, and lemon juice until smooth.
  4. Fold the wet ingredients into the dry ingredients gently until just combined—lumps are okay!
  5. Incorporate diced peaches and chopped pecans carefully into the batter.
  6. Let the batter rest for about 10-15 minutes to enhance flavor.
