  • 1 cup all-purpose flour
  • 1 1/3 cups rolled oats
  • 3/4 cup granulated sugar
  • 1 teaspoon cinnamon
  • 1/4 teaspoon salt (optional)
  • 2/3 cup unsalted butter, melted and cooled
  • 2 cups peaches, peeled and diced
  • 2 tablespoons granulated sugar (for peaches)
  • 2 teaspoons cornstarch
  • 1 teaspoon fresh lemon juice
  • 1 teaspoon almond extract

Instructions

  1. Preheat your oven to 350°F (177°C). Grease an 8-inch square baking dish and line with parchment paper.
  2. In one bowl, combine flour, oats, sugar, cinnamon, and salt. Mix well.
  3. Stir in melted butter until crumbly. Press two-thirds of this mixture into the bottom of your prepared dish.
  4. In another bowl, mix diced peaches with lemon juice, almond extract, cornstarch, and sugar. Pour over the crust.
  5. Sprinkle the remaining crumble mixture on top of the peaches.
  6. Bake for 33-35 minutes or until golden brown. Let cool completely before slicing.
