  • 1 teaspoon vanilla extract
  • ½ cup peach puree (fresh or canned)
  • 1 cup unsalted butter (room temperature, for frosting)
  • 3–4 cups powdered sugar
  • 3–4 tablespoons peach puree (for frosting)
  • 1–2 tablespoons sparkling grape juice (for frosting)
  • Pinch of salt (for frosting)
  • Fresh peach slices (for decoration)
  • Sparkling sugar or granulated sugar (for decoration)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin pan with cupcake liners.
  2. In a bowl, whisk together flour, baking powder, and salt.
  3. Cream butter and sugar until light and fluffy. Add eggs one at a time.
  4. Mix in sparkling grape juice, milk, vanilla extract, and peach puree until combined.
  5. Gradually add dry ingredients to wet ingredients until just mixed.
  6. Fill each cupcake liner two-thirds full with batter and bake for 18–20 minutes or until a toothpick comes out clean.
  7. Allow cupcakes to cool completely before frosting with peach buttercream made by mixing room temperature butter with powdered sugar, peach puree, and sparkling grape juice.
