  • ¼ cup chopped fresh parsley
  • ¼ cup olive oil
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon Dijon mustard
  • 1 clove garlic, minced

Instructions

  1. Chop all vegetables into bite-sized pieces: romaine lettuce, cucumber, tomatoes, red onion, and bell pepper.
  2. Finely chop the parsley.
  3. In a small bowl, combine olive oil, apple cider vinegar, Dijon mustard, minced garlic, salt, and pepper. Whisk until emulsified.
  4. In a large mixing bowl, gently toss together the romaine lettuce, cucumber, tomatoes, red onion, bell pepper, and parsley.
  5. Add grated Parmesan cheese to the mixed vegetables.
