Ingredients

Scale
  • 1 cup all-purpose flour
  • 2 large eggs
  • 3 cups panko breadcrumbs
  • ½ teaspoon cayenne pepper
  • 4 medium fish fillets (flounder, cod, or haddock)
  • Vegetable oil (for frying)
  • Salt and freshly ground black pepper (to taste)
  • Flaky sea salt (for serving)
  • Lemon wedges (for serving)

Instructions

  1. Set up your breading station with three shallow bowls: one filled with seasoned flour, one with whisked eggs mixed with salt and pepper, and the last with panko breadcrumbs mixed with cayenne pepper.
  2. Pat the fish fillets dry and season them with salt and pepper on both sides.
  3. Dredge each fillet in flour, dip into the egg mixture letting excess drip off, then coat generously in panko breadcrumbs.
  4. Heat vegetable oil in a heavy-bottomed skillet until shimmering. Fry each fillet for about 3-4 minutes on each side until golden brown.
  5. Transfer cooked fillets to a wire rack or paper towels to drain excess oil and sprinkle with flaky sea salt. Serve immediately with lemon wedges.
