Ingredients

Scale
  • 4 cups all-purpose flour
  • 4 tablespoons white sugar
  • 1 and 1/2 teaspoons salt
  • 1 teaspoon baking soda
  • 5 tablespoons cold butter (cut into pieces)
  • 1 and 3/4 cup buttermilk (or substitute)
  • 1 egg (lightly beaten)
  • 2 and 1/2 tablespoons orange zest
  • 1 cup dried cranberries

Instructions

  1. Preheat your oven to 375°F (190°C) and prepare a baking sheet with cooking spray or parchment paper.
  2. In a large mixing bowl, whisk together the flour, sugar, salt, baking soda, and orange zest.
  3. Cut in the cold butter until the mixture resembles coarse crumbs.
  4. In a separate bowl, combine the lightly beaten egg and buttermilk. Pour this into the dry ingredients and mix gently until just combined.
  5. Fold in the dried cranberries.
  6. Turn the dough onto a floured surface and gently knead it just until it comes together. Shape into a round loaf.
  7. Transfer to the prepared baking sheet. Score an ‘X’ on top to allow steam to escape.
  8. Bake for 50-55 minutes until golden brown and hollow-sounding when tapped on the bottom.
  9. Let it cool before slicing.
