  • 8 oz penne or rotini pasta
  • 1 tbsp olive oil
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • 1 ½ cups chicken broth
  • 2 tbsp Cajun seasoning
  • ½ cup grated Parmesan cheese
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add the meatballs and cook until browned on all sides (6-8 minutes). Remove and set aside.
  2. In the same skillet, sauté onions until softened (about 2 minutes), then add garlic and cook until fragrant (1 more minute).
  3. Pour in chicken broth and bring to a simmer. Add pasta directly to the broth and cook according to package instructions (8-10 minutes), stirring occasionally.
  4. Once pasta is al dente, stir in heavy cream and Cajun seasoning; let simmer gently for another 2-3 minutes until thickened.
  5. Return meatballs to the skillet, stirring to coat them in the sauce. Mix in grated Parmesan cheese until melted and well combined.
  6. Season with salt and pepper to taste before serving hot.
