  • 1 1/2 cups grated zucchini (well-drained)
  • 1 1/2 cups semi-sweet chocolate chips (divided)

Instructions

  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a large mixing bowl, whisk together quick oats, flour, cocoa powder, baking soda, salt, cinnamon, and brown sugar until well combined.
  3. In another bowl, mix melted butter, egg, and vanilla extract until smooth.
  4. Incorporate the wet ingredients into the dry mixture until just combined. Fold in grated zucchini and 1 cup of chocolate chips gently.
  5. Using a tablespoon, scoop dough onto prepared baking sheets, flatten slightly, and sprinkle remaining chocolate chips on top.
