  • 2 tablespoons olive oil
  • 1/2 yellow onion (diced)
  • 1 jalapeño (diced)
  • 1 red bell pepper (sliced)
  • 1 yellow bell pepper (sliced)
  • 2 cloves garlic (finely chopped)
  • 1 teaspoon sweet paprika
  • 1/4 teaspoon cayenne pepper
  • 2 pounds cod (cut into large pieces)
  • 2 vine tomatoes (chopped)
  • 2 cups seafood stock (or vegetable stock)
  • 13-ounce can full-fat coconut milk
  • Zest of 1 lime
  • Juice of 1 lime
  • Chopped green onions for garnish
  • Jasmine rice for serving

Instructions

  1. Heat coconut oil and olive oil in a large pot over medium heat. Add diced onion and jalapeño; sauté for about 3 minutes until softened.
  2. Stir in sliced bell peppers, cooking until brightened in color and slightly softened.
  3. Add garlic, sweet paprika, and cayenne pepper; cook until fragrant.
  4. Mix in chopped tomatoes along with their juices; stir everything together.
  5. Gently place cod pieces on top of the vegetable mixture, seasoning with salt and pepper.
  6. Pour in seafood stock and coconut milk; add lime zest. Stir gently to combine.
  7. Cover the pot partially and simmer on low heat for about 10-15 minutes until fish is cooked through.
  8. Let rest for five minutes before serving over jasmine rice, garnished with lime juice and green onions.
