  • 2 tablespoons melted butter
  • 16 ounces full-fat cream cheese, room temperature
  • ⅓ cup sugar
  • 1 teaspoon vanilla extract
  • 3 tablespoons brewed espresso
  • 2 large eggs

Instructions

  1. Preheat your oven to 325°F (163°C) and prepare a muffin pan by greasing it or lining it with cupcake liners.
  2. In a mixing bowl, combine Oreo crumbs with melted butter until the mixture resembles wet sand. Press into each muffin cup firmly.
  3. Bake the crusts in the preheated oven for about 10 minutes until set. Let them cool.
  4. In another bowl, beat room temperature cream cheese until smooth. Gradually add sugar, then mix in vanilla extract and brewed espresso.
  5. Incorporate eggs one at a time, mixing gently until just combined.
  6. Fill each muffin cup with the cheesecake batter, leaving some space at the top.
  7. Bake for 20 minutes or until set around the edges but slightly jiggly in the center.
  8. Allow cooling in the oven with the door slightly ajar for an hour before refrigerating for at least four hours or overnight.
