2 Tbsp unsalted butter
4 cups corn kernels (fresh or frozen)
1 tsp minced garlic
⅓ cup mayonnaise
½ tsp chili powder
½ cup cotija cheese (or feta)
1 Tbsp fresh lime juice
1–2 Tbsp chopped cilantro (optional)
Kosher salt (to taste)
Instructions
Heat a large skillet over medium-high heat. Melt the unsalted butter and add the corn kernels. Cook for about 8–10 minutes until tender and slightly charred.
Add minced garlic in the last two minutes of cooking, stirring gently to avoid burning.
Remove from heat and let cool for a few minutes.
In a large mixing bowl, combine cooled corn mixture with mayonnaise, chili powder, cotija cheese, lime juice, and optional cilantro. Season with kosher salt to taste.
Allow the salad to chill in the refrigerator for at least 30 minutes before serving.
