  • 1 pound cooked medium shrimp, peeled and deveined
  • 1 cup tomato juice
  • ½ cup ketchup
  • 3 tablespoons lime juice
  • 2 tablespoons Mexican hot sauce
  • ½ cup English cucumber, finely diced
  • ½ cup white onion, finely diced
  • ½ cup bell peppers, finely diced
  • 1 jalapeño, seeded and minced (optional)
  • ⅓ cup fresh cilantro leaves, chopped
  • ½ avocado, diced (optional)

Instructions

  1. In a large mixing bowl, marinate the shrimp with lime juice and a pinch of salt. Set aside.
  2. In another bowl, whisk together the tomato juice, ketchup, lime juice, hot sauce, salt, and pepper.
  3. Gently fold in the diced cucumber, onion, bell peppers, jalapeño (if using), celery (if desired), and cilantro.
  4. Add the marinated shrimp to the vegetable mixture and combine thoroughly.
  5. Cover tightly and chill in the refrigerator for 15 to 30 minutes to allow flavors to meld.
  6. Just before serving, fold in diced avocado gently.
  7. Serve chilled with tostadas or saltine crackers.
